Culinary experience in the highlands mil, Chef Virgilio Martinez’s new restaurant

Virigilio Martinez has been the winner of the 2017 Chef’s Choice Award, owner of the Central Restaurant ranked fifth in the list of the 50 Best Restaurants in the World (50 World’s Best Restaurants) and awarded a Michelin star.
Continuing with his mission of exposing the different ecosystems of our country and the infinite variety of Andean products, among others, Virgilio has recently inaugurated the restaurant MIL, located in the altitudes of Cusco, in Moray.
MIL is not just a restaurant, it is a center for research, interpretation and development that explores with curiosity the origins and histories of Andean biodiversity. It really is a place where we will find high-altitude cuisine, an experience that not only concentrates on the table but also begins with its surroundings, with the hectares of land surrounding the restaurant and where a great variety of Andean potatoes, roots, fruits and other seeds are grown in the valley; crops that are taken care of by comuneros (locals) and that have generated a participatory system to provide work to others.
The MIL experience begins with a visit to the whole house (Restaurant), the chef Maria Pia Uriarte welcomes us and is in charge of the tour of the 40 guests who daily receive and taste their Tasting Menu composed, as the chef says, by 8 moments, and that changes daily. A proposal to taste the known and unknown of Cuzco’s ancestral cuisine and that puts in value the millenary culture and tradition, which are savored in every bite.
