1. Arroz Chaufa

This dish is Peru’s take on Chinese fried rice, and it’s everywhere for a reason. Cooked in a blazing hot wok with ginger, garlic, scallions, and soy sauce, it’s fast, flavorful, and comforting. But here’s the trick: go for the seafood version — “chaufa de mariscos.” The combination of fresh ocean catch and golden rice is unbeatable. 2. Adobo

Peruvian ceviche is simple perfection raw fish marinated in citrus until it “cooks” into tender, white flakes. Topped with red onion, spicy ají, and served with corn and sweet potato, it’s a cold dish that hits with bold, fresh flavor.

4. Rocoto Relleno

This is Peru’s answer to stuffed peppers, but with a kick. Rocoto peppers are filled with spiced meat and gooey cheese, sometimes breaded and fried for extra crunch. Despite their fiery reputation, the vinegar marinade calms the heat, so you’re not setting your mouth on fire. Best one I had? Dona Clorinda in Pisac. It was rich, satisfying, and surprisingly balanced.

5. Pachamanca

Pachamanca isn’t just a dish — it’s an ancient cooking ritual. Meats and vegetables are seasoned, wrapped in herbs like muña, then cooked underground over hot stones. The result? Toasted corn kernels that look like giant popcorn but don’t pop. Cancha is crunchy, salty, and served as a snack or appetizer throughout the Andes. Made from Chulpe corn, it’s perfect with a cold drink or next to a fresh ceviche. I had some at Chuncho in Ollantaytambo and couldn’t stop grabbing handfuls.

7. Trout

High in the Andes, trout is everywhere — fresh, simple, and delicious. Whether grilled, fried, or baked, it’s usually served with garlic sauce and local sides. I loved the fried trout at Dona Clorinda in Pisac. It was crisp, juicy, and had that clean mountain flavor you only get from a fish caught nearby.

8. Quinoa Soup

In the highlands around Lake Titicaca, food needs to be simple and hearty. Quinoa soup is the staple — a mix of quinoa, potatoes, carrots, and onions. It’s warm, filling, and exactly what your body needs when the altitude hits. It’s not fancy, but it’s honest food that keeps you going.

9. Lomo Saltado

This is Peru’s comfort food king. Strips of marinated beef wok-fried with onions, tomatoes, and spices, served with both rice and fries. Found all over the country, but the one I had at Dona Clorinda in Pisac was next level — rich flavor, tender meat, and perfect fries to soak up every drop.

Where to eat it: Traditional version in the Andes, refined tasting at Maido (Lima).
In the Andes, guinea pig is a local delicacy, not a pet. It’s grilled, stuffed or fried, and has a rich flavor closer to duck than chicken. I tried a small bite at Maido — surprisingly tasty.
